Grain Bowls

There are a few easy steps to follow when making a grain bowl. Here are my 7 tips to creating a flavor packed bowl!

7 Easy Tips

  1. Pick your grain/legume/pasta of choice. I like cooked tri-color quinoa, lentils, bulgar, couscous or brown rice.

  2. Add a fresh lettuce base. I use Arugula or Spinach.

  3. Add some sliced some fresh veggies.

  4. For a zip add pickled veggies! I love pickled onions, pepper and cauliflower.

  5. Add your favorite protein. Cooked chicken breast, roasted turkey, salmon or tuna. Don’t be afraid to go in the pantry and use canned beans as well. Chickpeas and black beans are a great source of protein.

  6. Top with your favorite crumbly cheese or add a crunch with tortilla strips.

  7. Dress with your favorite salad dressing or make your own!

Instructions

In a large soup bowl or plate, arrange quinoa and arugula. Drizzle with a bit of olive oil and a few pinches of salt. Next, sprinkle your veggies over your grains and lettuce. Top your grains with your protein of choice and drizzle with your favorite dressing!

Greek Grain Bowl

Ingredients

  • 1 cup Quinoa, cooked

  • 1 cup Arugula

  • Drizzle, Olive Oil

  • 1/2 cup Tri-Color Grape Tomatoes, halved

  • 1 Mini English Cucumber, sliced into small thin rounds

  • 1/4 Red Onion, thinly sliced

  • 1/4 cup Kalmata Olives, pitted

  • 1 Sliced Grilled Chicken Breast or 1/2 cup canned Chickpeas, rinsed and drained

  • Crumbled Feta Cheese

Dressing (Mix all ingredients in a bowl. Thin out with water if dressing is too thick.)

  • 1/2 Cup Greek Yogurt

  • 1/2-1 tbs Lemon Juice

  • 1/2 tsp Fresh Dill, chopped

  • Salt + Fresh Black Pepper TT

  • 1-2 tsp water, to thin out

Fiesta Bowl

Ingredients

  • 1 cup Quinoa, cooked

  • 1 cup Arugula

  • Drizzle, Olive Oil

  • 1/2 cup Canned Black Beans, rinsed and drained

  • 1/2 cup Tri-Color Grape Tomatoes, halved

  • 1/2 Avocado, Diced

  • 1/4 cup Pickled Red Onions, thinly sliced and drained

  • 1/4 cup Fire Roasted Corn, rinsed and drained

  • 1/2 Jalapeño, thinly sliced

  • 1/4 cup Tortilla Strip Toppings

Dressing (Pour all ingredients into a jar with a lid and shake until incorporated.)

  • 3/4 cup Olive Oil

  • 1/4 cup Apple Cider Vinegar

  • 1 tbs Cilantro, chopped

  • 1 tbs Maple Syrup

  • 1 tsp Lime Juice

  • Salt + Pepper TT
