Collard Greens

Ingredients
3 Slices of Bacon, Diced
1 Medium Yellow Onion, Diced
2 Garlic Cloves, minced
2 Bunches Collard Greens, Washed and roughly chopped 2 tsp Red Pepper Flakes (Optional)
2 cups Chicken Stock
TT Salt and Freshly Ground Pepper
Cooking Instructions
Add bacon to a large pot and put on the stove on medium/high heat. Let the bacon render and get cripsy; remove bacon onto a plate with a paper towel to drain. Add the onion and sauté until translucent, 5-7 minutes. Add the garlic and chili flakes and sauté for another 30 seconds.
Add the chopped greens to the pot and stir until wilted. Add the chicken stock and bring to a boil. Once the pot has come to a boil turn down to a simmer and cover for 30 minutes until the greens are tender.
