Collard Greens

Serves: 4-6

Ingredients

  • 3 Slices of Bacon, Diced

  • 1 Medium Yellow Onion, Diced

  • 2 Garlic Cloves, minced

  • 2 Bunches Collard Greens, Washed and roughly chopped 2 tsp Red Pepper Flakes (Optional)

  • 2 cups Chicken Stock

  • TT Salt and Freshly Ground Pepper

Cooking Instructions

  1. Add bacon to a large pot and put on the stove on medium/high heat. Let the bacon render and get cripsy; remove bacon onto a plate with a paper towel to drain. Add the onion and sauté until translucent, 5-7 minutes. Add the garlic and chili flakes and sauté for another 30 seconds.

  2. Add the chopped greens to the pot and stir until wilted. Add the chicken stock and bring to a boil. Once the pot has come to a boil turn down to a simmer and cover for 30 minutes until the greens are tender.
