Gumbo

Ingredients

  • 3 tablespoons vegetable oil

  • 1 lb Boneless skinless Chicken Thighs

  • 1/3 cup all-purpose flour

  • 2 ribs of celery, chopped

  • 2 Green peppers, chopped

  • 1 medium onion, chopped

  • 4 garlic cloves, chopped

  • 3 Sprigs Fresh Thyme

  • 2 ea Bay Leaf

  • 1 Tbs Cajun Seasoning

  • 4 cups of Chicken Stock

  • Coarse salt and ground pepper

  • 1 package, Frozen Okra, cut

  • 8 ounces smoked sausage, halved lengthwise and sliced 1 inch thick 2 ea Scallions , Sliced

Cooking Instructions

  1. In a 5-quart Dutch oven or heavy-bottomed pot, heat oil over medium. Season the chicken thighs with salt and pepper and sear about 7-10 min until golden brown on both sides. Remove the Chicken and put on a plate for later use.

  2. Add flour to the dutch oven and cook whisking constantly, until dark brown (slightly darker than peanut butter) 7 to 10 minutes. Stir in bell peppers, onion and celery and sauté until onion is translucent, about 8-10 min. Add the garlic, thyme and bay leaf and cajun seasoning.

  3. Add 4 cups chicken stock; stir in the sausage and chicken. Bring to a boil and then turn the burner down to simmer and cover for 15-20 min. (Simmer up to 2 hours for rich flavor). Stir in the okra and cook for another 5 min. Season with salt and pepper to taste. Serve with rice and sliced scallions.
