Pistachio Crusted Scallops
Ingredients
8 Bay Scallops
Salt and Pepper to taste
1/2 cup pistachios, chopped
1/3 cup chopped cilantro
1/4 cup chopped mint
1 tablespoon hot honey
Zest of one lemon
3 tablespoons olive oil
Instructions
Prepare Scallops
Pat the scallops dry with a paper towel and remove the abductor muscle (the small side part of the scallop).
Season Scallops
Season both sides of the scallops with salt and pepper to taste.
Sear Scallops
Heat a stainless steel pan over medium-high heat and add 2 tablespoons of olive oil.
Once the oil is hot, carefully place the scallops in the pan.
Sear each side of the scallops for 2-4 minutes until they develop a golden brown crust. The scallops will naturally release from the pan when properly seared. If they stick, allow them to cook a bit longer before flipping.
Prepare Pistachio Herb Mix
In a medium bowl, combine the chopped pistachios, cilantro, mint, hot honey, and lemon zest.
Season the mixture with salt and pepper to taste.
Stir until well combined.
Serve
Once the scallops are cooked through and have a golden crust, remove them from the pan.
Place the seared scallops on a serving platter.
Top each scallop with a generous spoonful of the pistachio and herb mix.
Serve immediately and enjoy your delicious pistachio crusted scallops!
Note: You can garnish with additional lemon zest or chopped herbs for an extra burst of flavor. Serve these scallops as an appetizer or as a main dish with your favorite side dishes.
