Pistachio Crusted Scallops

Ingredients

  • 8 Bay Scallops

  • Salt and Pepper to taste

  • 1/2 cup pistachios, chopped

  • 1/3 cup chopped cilantro

  • 1/4 cup chopped mint

  • 1 tablespoon hot honey

  • Zest of one lemon

  • 3 tablespoons olive oil

Instructions

  1. Prepare Scallops

    • Pat the scallops dry with a paper towel and remove the abductor muscle (the small side part of the scallop).

  2. Season Scallops

    • Season both sides of the scallops with salt and pepper to taste.

  3. Sear Scallops

    • Heat a stainless steel pan over medium-high heat and add 2 tablespoons of olive oil.

    • Once the oil is hot, carefully place the scallops in the pan.

    • Sear each side of the scallops for 2-4 minutes until they develop a golden brown crust. The scallops will naturally release from the pan when properly seared. If they stick, allow them to cook a bit longer before flipping.

  4. Prepare Pistachio Herb Mix

    • In a medium bowl, combine the chopped pistachios, cilantro, mint, hot honey, and lemon zest.

    • Season the mixture with salt and pepper to taste.

    • Stir until well combined.

  5. Serve

    • Once the scallops are cooked through and have a golden crust, remove them from the pan.

    • Place the seared scallops on a serving platter.

    • Top each scallop with a generous spoonful of the pistachio and herb mix.

    • Serve immediately and enjoy your delicious pistachio crusted scallops!

Note: You can garnish with additional lemon zest or chopped herbs for an extra burst of flavor. Serve these scallops as an appetizer or as a main dish with your favorite side dishes.
