Citrus Salad
Ingredients
1 grapefruit
1 navel orange
1 blood orange
1/2 small shallot, minced
1 tablespoon white wine vinegar
1 teaspoon Dijon mustard
1 teaspoon maple syrup
pinch kosher salt, to taste
3 tablespoons olive oil
1 tablespoon chives, chopped
1 tablespoon parsley, chopped
1/2 bulb fennel, thinly sliced
1/4 cup pistachios
1 teaspoon honey
Pepper , to taste
Cooking Instructions
Cut off the peel of the grapefruit and oranges and slice the citrus into rings.
In a medium bowl, stir together the shallots, vinegar, mustard, maple syrup, honey, kosher salt and herbs. Gradually whisk in the olive oil until combined.
Arrange the citrus on plate and top with fennel. Drizzle with vinaigrette, fresh ground pepper and top with chopped pistachios.
