Honey Roasted Carrots

Ingredients
2 bunches Whole Carrots
2 Tbs Olive Oil
1 Tbs Honey
1/2 tsp Fresh Thyme, Chopped
Salt TT
Cooking Instructions
Preheat oven to 400 Degrees. Prepare a sheet tray with parchment paper.
Trim the stems of the carrot tops off exposing just a bit of the green. Toss the carrots in the grapeseed oil and spread in one even layer on the sheet tray. Season with salt TT.
Roast in the oven until the carrots are fork tender about 25-30 min.
Once the carrots are out of the oven and still hot toss with honey and garnish with fresh thyme.
