Meat Sauce
Ingredients
1 lb Ground Beef
2 tbs Olive Oil
1 Yellow Onion, Quarted
2 Medium Carrots, Chopped into large pieces
2 Celery Stalks, Chopped into large pieces
3 Garlic Cloves, Minced
1 tbs, Tomato Paste
1 tbs, Dried Italian Herb Mix
1 24oz can crushed tomato
Salt
Pepper
Instructions
In a heavy bottom medium pot or Dutch Oven brown the ground beef in 2 tbs of olive oil on medium high heat, about 5-7 min. Once the beef is brown then remove from the pot and leaving the oil and meat drippings.
While you are browning the beef, add the onion, carrots and celery to a food processor. Process the vegetables until the vegetable are in small pieces like a salsa. Transfer the vegetables to the dutch oven and cook until the onions are translucent, about 5-7 min.
Add the chopped garlic and stir until fragrant 30 sec, then add the tomato paste and cook for 2 mins. Return the ground beef to the dutch oven and add in the dried Italian herb mix. Season with salt and pepper and cook for 2 min.
Add the can of crushed tomatoes and bring to a boil. Once the sauce comes to a boil, cover with a lid and bring to a simmer for 20 min., stirring occasionally. Serve with your favorite pasta or layer in lasagna.
