Pumpkin Spice Waffles

Servings 8-10 Waffles/Pancakes

Ingredients

Dry:

  • 2 cups, All Purpose Flour

  • ¼ cup, Dark Brown Sugar

  • 1 tsp, Baking Powder

  • ½ tsp, Baking Soda

  • ¼ tsp, Salt

  • 2 tsp, Pumpkin Pie Spice

  • 1 tsp, Cinnamon

Wet:

  • 3, Large Eggs

  • 1 1/3 cup, Milk

  • ¼ cup, Maple Syrup (or ¼ cup of maple syrup + 3 tbs of melted butter) *** See recipe

  • 1 cup, Canned Pumpkin (Not pumpkin pie filing)

  • 1 tsp Vanilla Bean Paste or Vanilla Extract

Non-Stick Spray 

Cooking Instructions

  1. In one bowl mix all of the dry ingredients. In the second bowl mix all of the wet ingredients. 

  2. Slowly whisk the dry ingredients into the wet ingredients. Whisk until the batter comes together and is lump free. 

  3. Spray both sides of your waffle maker with non-stick spray. Portion your waffles with a ½ cup measuring cup and close the lid. Cook the waffles according to the manufacture’s directions. (Typical time for the waffles is 4-6 min. depending on how you like your waffles.)

  4. Continue with the rest of the waffles until the batter is gone. 

*** Pancakes: Heat non-stick skillet on med-high heat. Once hot, spay the skillet with non-stick spray.   Portion the pancakes with ½ cup measuring cup. Cook 2-3 minutes on each side. Repeat with the rest of the batter until it is gone.
