Southern Fried Corn

Cook Time: 15 min.

Ingredients  

  • 3 ears of Corn, cut from the cob

  • 1/2 yellow onion, small diced

  • 1 red pepper, small diced

  • 2 tbs Butter

  • 1 cup water

  • 1 tbs Flour

  • 1 tsp Sugar

  • Salt, TT

  • Pepper, TT

Cooking Instructions

  1. Heat a large skillet on medium high heat. Add your butter and let it melt. Once the butter is melted sauté the onions and peppers until they onions are soft and translucent. 

  2. Once the onions and peppers are cooked through then add in the corn from the cob and its juices. (Make sure to scrape the cob to release the juice from the cornels.) Sauté the corn for 2-3 min. until the corn is bright yellow. Meanwhile, in a small bowl mix together the water and the flour to make a slurry.

  3. Slowly stir in the slurry and cook until it starts to thicken. Reduce heat to low and cook for another 7-10 minutes stirring occaioanlly. Season with sugar, salt and pepper and serve.
