Cilantro Lime Rice

Serves: 4

Cook Time: 20 min.

Ingredients

  • 1 cups long grain white rice

  • Kosher Salt

  • 1 cup cilantro

  • 1 jalapeño, seeded and roughly chopped

  • 1/4 cup water

  • 2 tbs olive oil

  • 1 lime, juiced

Cooking Instructions

  1. In medium sauce pan over high, stir together the rice, 2 cups of water and 1 tsp of salt. Bring to a simmer, then cover, reduce to low and cook until the liquid is absorbed 15 to 20 minutes.

  2. While the rice is cooking, in a blender puree until smooth 1/4 cup of water, cilantro, 1 tsp of salt, oil and jalapeño. 

  3. When the rice is done, fluff the rice and fold in the puree and the lime juice.
