Cilantro Lime Rice

Ingredients
1 cups long grain white rice
Kosher Salt
1 cup cilantro
1 jalapeño, seeded and roughly chopped
1/4 cup water
2 tbs olive oil
1 lime, juiced
Cooking Instructions
In medium sauce pan over high, stir together the rice, 2 cups of water and 1 tsp of salt. Bring to a simmer, then cover, reduce to low and cook until the liquid is absorbed 15 to 20 minutes.
While the rice is cooking, in a blender puree until smooth 1/4 cup of water, cilantro, 1 tsp of salt, oil and jalapeño.
When the rice is done, fluff the rice and fold in the puree and the lime juice.
