Chipotle Steak Tacos
Serves: 4 with 3 Tacos each

Ingredients
2 pound strip steak, Diced in 1/2" Cubes
2 tbs chipotle in adobo sauce (Add 1-2 peppers if you like)
1 tbs Cumin
1 lime, juiced
1 tsp Salt
1 tbs Grapeseed Oil
Corn Tortillas
Garnish
Sliced Avocado
Shredded Lettuce
Sliced Radishes
Crumbled Queso Fresco
Chopped Red Onion
Lime Wedges
Cooking Instructions
In a large bowl combine the steak, chipotle in Adobo sauce with 1-2 peppers, cumin, lime juice, and salt. Let marinade for 10 min.
While the steak marinades heat up the tortillas on the stove top. If you have a gas range put the tortillas right on the burner on medium heat. Let toast 30-50 seconds on each side flipping with tongs. If you have an electric/flat top range heat a dry skillet and toast each tortilla for 30-50 seconds. Wrap the warm tortillas in paper towel or a clean towel on a plate and let them sit in the microwave or the oven until you are ready to serve them.
Heat a large skillet on Med/High heat. Once hot add the grapeseed oil. and the marinaded steak. You might want to turn your fan on if you have a sensitive fire alarm! Sauté the steak 3-5 min until browned on all sides.
Serve with your warm tortillas and favorite garnishes!
